Monte Pollino Contadino unfiltered extra virgin oil is made in the traditional manner that the contadino (farmers) have been making olive oil over the centuries. We pick the olives by hand and crush them immediately after they have been harvested. We do not filter the oil; let it settle naturally and then we bottle it.
